I used to make Elderberry jelly every year from foraged elderberries, but after the wide use of weed killers and insecticide sprays became a common occurrence, I grew leery of picking wild fruits and greens. Elderberry jelly was a favorite and is almost impossible to find nowadays. I tried growing them here, but something dug them up every time. Never did find out who, or what. 🙄

They still make the jelly over here and the wines too Betty – l remember once many years ago drinking an elderberry alcohol and falling off my seat it was so strong 🙂

Ha! Ha! Reminds me of when my oldest son was 15. Unbeknownst to me, he decided to make elderberry wine by an old recipe he found that had scanty instructions.
We had an old fashioned gallon size crockery jug that he felt would be very appropriate. He combined the ingredients required, poured it in, corked the jug and sat it on top of the furnace, “where it would stay warm”, to ferment. The furnace room was behind the kitchen in that house.
Well, it just so happened, Granny was visiting. One morning as she and I were sitting at the kitchen table having our morning coffee, there was a loud explosion like a bomb went off, followed by the sound of falling debris. Granny said, “Oh, My!”, the cup full of coffee went straight up into the air and she toppled over backwards in her chair. I was so concerned about her that I don’t remember even being startled. Thank goodness, she survived with no evident injuries, but was definitely unhinged for a few days.
Come to find out, my son had not only corked the jug, but had sealed it with wax. As the gases built up, the pressure was so strong that it caused the thick crockery to explode projecting pieces of crockery all over the furnace room. Thank goodness no one was in there at the time!
I don’t know why, but Granny loved to visit us as my kids were growing up. I think she found it like an exciting, though sometimes dangerous, adventure. 😊
